Parsley salad

This easy-to-make salad is a must-have with grilled meat such as Kufta Kabab and grilled chicken. Use it as a bed under your kabab or to add a crisp fresh touch to grilled meat sandwiches.

 

 

 

 

 

  

Ingredients

  • 1 bunch parsley (must be fresh)
  • 1 medium onion
  • Juice of 1 small lemon or 3 tablespoons pomegranate molasses
  • 1 teaspoon sumac
  • 1 medium petite diced tomato (optional)
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste.
Parsley salad

Directions

  1. Chop the parsley and wash and drain well.
  2. Cut the onion into wings.
  3. Add parsley, onion, and sumac.
  4. Add lemon, oil, salt and pepper. Mix well and add vinaigrette onto salad.
  5. Mix gently and serve with Kufta Kabab, sheesh tawook, or grilled chicken.
